Quinoa Mint Tabouli Salad

Yields: 4

Ingredients
1 cup cooked quinoa
1 cup parsley, chopped
1/2 cup green onion, chopped
2 tbsp fresh mint, finely chopped
2 garlic cloves, minced
1/2 extra virgin olive oil
1/3 cup fresh lemon juice
1/2 tsp sea salt
1/2 tsp black pepper

Directions
1. In a mixing bowl, combine garlic, lemon juice, olive oil, salt, pepper, green onions, parsley, and mint.
2. Add quinoa and toss lightly.
