Chimichurri Sauce

1 cup coarsely chopped fresh OR ½ cup dried parsley  
2 tbsp fresh OR 1 tbsp dried oregano leaves
3 garlic cloves, finely chopped
½ cup olive oil
2 tbsp apple cider vinegar
salt & pepper to taste

Place all ingredients in food processor and pulse until combined. Let sit on counter for a few hours for flavors to combine. Store in refrigerator for up to 3 days.
